Meyer Lemon | Salted Melon | Chamomile
Oliver’s Vineyard is situated in a cool part of the Edna Valley. This is an area where the cold air pools up at night, while the sun warms the shale dusted black clay soils during the day. Chardonnay from this site tends to be more elegant and restrained than some of the other sites in our region, perfect for the style of wines we like to drink. Chamomile, Meyer lemon, and salted melon are some of the flavors we find in this nuanced wine. To retain freshness while seeking complexity, this wine was barrel fermented in 500L neutral oak puncheons and then aged in a combination of oak barrels and stainless steel for 18-months prior to bottling unfined and unfiltered.
